How to make chocolate to dip strawberries in

Make sure your strawberries are washed, dried, and at room temperature. Using berries with fresh green leaves (rather than bedraggled, brownish leaves) is a better choice.

  • Ready a piece of parchment paper, foil, or waxed paper large enough to hold the berries in a single layer. Place the paper on a baking sheet.

  • Put the chocolate in a microwave-safe bowl, and heat it for about 1 minute, just till it looks soft and shiny.

  • Use a spoon to stir the chocolate till it's melted and smooth.

  • Grasp a strawberry by its stem, and swirl it in the chocolate to coat all sides. Place on the paper or foil.

  • Repeat with the remaining berries, spacing them so they don't touch.

  • Refrigerate the berries for 20 minutes; this will set the chocolate. Remove them from the refrigerator, and let them harden completely at room temperature.

  • Serve the same day, if possible.

  • Yield: 1 quart chocolate-dipped strawberries.

    • This amount of chocolate will cover about 18 fairly large berries. If your berries are very small, you might want to increase the amount of chocolate.

      Best Chocolate for Dipping Strawberries

When making chocolate strawberries, the first thing to decide is what kind of chocolate you want to use.

There are a variety of different chocolate options for dipping strawberries. Most work just fine but some have a different result. We typically use one of the following:

      • Ghirardelli Melting Wafers (milk, white or dark chocolate)
      • Candy Coating
      • Baker’s Chocolate
      • Chocolate Chips (Our favorite our Guittard Chips)

Our current favorite chocolate to use are the Ghirardelli Melting Wafers. The chocolate is delicious, and melts very easily.

Candy coating is a great option because it’s the least expensive and comes with a lot so you can get a lot of strawberries out of one box. It’s also easy to melt and sets up perfectly. The result is a more candy type chocolate coating with a little bit more stiffness.

We will use Baker’s chocolate when we are making fewer strawberries or when we really want to impress guests. It’s a tid more expensive but has a softer coating and tastes more gourmet.

Guittard Chocolate Chips aren’t too expensive, and the chocolate is incredible!! Whether you like dark, milk chocolate or semi-sweet chocolate, these chips are a great option. We have seen that chocolate chips burn more easily so you need to be extra careful when melting.

      How to melt chocolate

For any of the chocolates listed above, we typically melt them in a small pot on LOW heat. The key is to stir constantly with a rubber spatula until the chocolate is melted and smooth.

You can also use the microwave to melt chocolate. To do that, microwave chocolate in a glass bowl (or microwave-safe bowl) for 30 seconds on HIGH. Remove and stir. Repeat with 15 seconds blasts in the microwave until all the chocolate is melted.

Do you need a double-boiler for melting chocolate?

Using a double-boiler definitely helps while melting chocolate and also helps it become silky smooth.

If you don’t have a double boiler you can bring an inch of water to a simmer in a small pot. Set a glass bowl above it with the chocolate inside and stir until the chocolate is all melted.

Having said that, we rarely use a double-boiler and use the method above for melting chocolate.

      What You’ll NEED

As mentioned, these strawberries are so easy to make. If you’ve ever bought them before you will probably remember that were pretty expensive. Making them at home is definitely the way to go to save money and get more of them.

With about $10 of supplies, we can get at least 2 dozen strawberries with a 16 oz. package of candy coating or bag of Ghirardelli melting wafers. Here is what you’ll need to make them…

Here are the supplies need to make this dipped strawberries:

HOW TO MAKE CHOCOLATE COVERED STRAWBERRIES

CLEAN STRAWBERRIES. To begin, rinse your berries. Place them on a paper towel to dry. I usually do this the morning of when I will be making them.

NOTE: Making sure the strawberries are completely dry is key since chocolate will not stick to water.

PREPARE BAKING SHEET. Line a baking sheet or pan with parchment paper. Place strawberries right next to your pan. Also, place a hot pad next to the pan for when the chocolate is melted.

NOTE: Sometimes the parchment paper doesn’t stay very well and starts to roll back up. To stop this I will spray a little cooking spray on the pan and then put on the parchment paper. Works like a charm! 😉

MELT CHOCOLATE. Melt your chocolate. Melt on LOW heat in the saucepan, stirring CONSTANTLY with a rubber spatula. Yes, it may take at least 5 minutes and your hand gets tired, but your candy will melt perfectly. When chocolate is completely smooth, remove from heat.

      Continued…

DIP STRAWBERRIES. Hold your pot of chocolate at an angle. Grab strawberries by the stem and dip both sides in the chocolate making sure to shake off excess chocolate and place on your parchment paper. Continue doing this for all strawberries.

NOTE: One thing I like to do is go back and double dip the strawberries once they’ve set. Makes them extra chocolate-y and SMOOTH on the outside. I can usually get about 16 medium strawberries done with one bag of Ghirardelli melting wafers.

ANOTHER NOTE: 6 cubes of candy coating will cover between 15-20 small/regular size strawberries. It will also cover 10-12 large strawberries.

LET SET. Let Strawberries set on your counter until hard. Melt opposite chocolate and place in a ziploc bag (or piping bag) with a small cut in the corner. Place melted chocolate inside and drizzle back and forth over dipped strawberries.

To set more quickly, place strawberries in the refrigerator.

Just remember that the cold can sometimes produces condensation on the strawberries which can sometimes get in the way for the chocolate drizzle. Sometimes it does nothing, but I hate risking it. 😉

GIFT or ENJOY. We like to place these in a cute container or on a plate and wrap in cellophane to gift. Or, we love to have them for parties or special dinners and holidays.
