Why purchase a Whole or Half Bulk Beef?

  • Lower Cost: There are two reasons why we can offer custom bulk purchases at a lower cost than purchasing by the piece.  First, custom beef processing cost less and secondly, the amount of time spent handling the product is less.   Because of these two reasons, we get to pass along the savings to you. It's really a win-win for both the farmer and the consumer.

  • Flexibility: You get to choose which cuts you want to keep and which ones you don't. Nothing is wasted.  It's whatever you choose!   We will send an easy questionnaire for you to fill out to decide how you want your beef cut.

  • Convenience:  Be ready and have your freezer stocked for several months at a time!  This saves you time as it's a one time transaction and meat is always at your fingertips.

  • Half Beef: $6.50/lb hanging weight.  Estimated hanging weight 200 to 300 lbs. Total price estimate $1300 to $1950. Price includes processing.

  • Whole Beef: $6.00/lb hanging weight. Estimated hanging weight 400 to 600 lbs. Total price estimate $2400 to $3600.  Price includes processing.

  • NOTE: 20 lbs of meat takes approximately 1 cu. ft of freezer space.

  • The hanging weight is the weight after the blood, hide and inedible parts are removed. The hanging weight ranges 51 to 53% of the live weight. That does not include offal.

  • How long do you dry age beef? It is typically dry aged for 5 to 14 days (can be customized on request). We prefer to cut our animals as quick as possible. The flavor is already there!

  • What is the hanging weight vs boxed weight?

    Hanging Weight: This is the weight of the butchered animal as it hangs in the locker to dry age. This weight does not include the head, hide, hooves, blood and innards, which have been removed. Estimated take home (boxed) is 63-65% of the hanging weight.

    Boxed Weight: This is the net weight of the meat you will receive that is packaged and ready for your freezer.

  • Why use the hanging measurement?

    We use this weight measurement because we are not selling individual retail cuts but instead are selling by the half or whole animal.

  • How does hanging weight relate to live weight or packaged retail weight?

    As a general rule on a well finished 100% grass-fed steer, the hanging weight is 55% of the live weight and the cut and packaged meat is on average about 60% of the hanging weight. Here is the math:

    1000 lbs live weight x .55 = 550 lbs hanging weight x .60 = ~330 lbs packaged product (meat, bones, etc) on a whole beef animal. This is a general rule. If the beef animal is overly fat, the hanging weight to packaged meat yield is lower because more is trimmed off. If there isn't enough fat, the yield is also lower because there is more bone per fat / muscle.

  • Savings of approximately 15 to 20% versus buying individual cuts of grass-fed beef.

  • This price includes product and processing. We DO NOT offer delivery. You will need to pick-up your beef at the processor.

  • We currently utilize Primo’s Processing in Hondo, TX and Regal Meats in Uvalde, TX.

  • Full payment is due before pick-up. CASH, CHECK OR pay online is preferred. Online payments with credit cards will be charged a 3% transaction fee.

  • NOTE: We prefer to process our cattle in the early Spring and late Fall when the pastures are in their best condition. Our processing dates are scheduled for March to May and September to December.

  • We can customize the cut sheet or let us fill it out for you.

  • The breakdown is approximately:

    • 50% ground beef

    • 30% roasts

    • 20% steaks

    • as well as your portion of bones and organ meats

Next Steps

  1. We require a $200 deposit for Half or $400 deposit for a Whole. You can simply click on the links above to place your deposit.

  2. You will receive an email when your animal is delivered to the processor. We only process animals in the Spring and Fall. We will do our best to let you know when your animal will be ready for processing.

  3. It’s time for you to get your freezer ready. Remember is takes about 1 cu ft of freezer space per 20 lbs of product. A half beef typically takes up about 10 to 15 cu ft of freezer space and a whole animal twice that.

  4. We will email you a cut sheet. Not to worry we will walk you through this over the phone. It takes about five minutes. We need this within a few days of your animal being processed.

  5. You will receive a final bill via Square. This needs to be paid before you pick up your beef from the processor. You can pay by mailing a check or with a credit card on your Square bill.

  6. Your order typically takes 2-3 weeks from the time we drop off the animal at the processor to the time it’s ready to be picked up. Your beef must be picked up from the processor within 7 days of notification. We will send you all of the details on picking up your beef. It will be vacuum sealed, labeled, frozen and boxed when you pick it up. If there is a problem with your order please notify us ASAP so we can work with the processor to remedy a solution.

Buying a whole cow or half a cow (not a quarter cow) will get you the best deal. A whole or a half cow is comparable in price when you break down the hanging weight and finished cuts price per pound. But a quarter cow is more expensive than both, running between $8.07 – $13.04 per pound.
