Marshmallows come in three different sizes: mini, regular, and jumbo. Jumbo are also sometimes referred to as roaster or extra large marshmallows. This recipe calls for jumbo marshmallows, not regular marshmallows so make sure you are using the correct kind.

  • Rice cereal: Such as Rice Krispies.
  • Butter: I used unsalted butter, but you can also use salted if your prefer a little salt in your recipe.
  • Vanilla extract: If possible, use pure vanilla extract.

How to make rice crispy treats with jumbo marshmallows

Measure your rice cereal out in a large mixing bowl. Set it aside.

Spray a large cooking pot with non stick spray. Next, slice your butter and add it to the pot. Cook on low until the butter is melted.

Add your jumbo marshmallows and cook them on medium-low until they are completely dissolved in the butter. Be careful not to raise the temperature too much. Cook them low and slow while frequently stirring.

Once the marshmallows are completely melted add the vanilla extract and stir well.

Pour over the rice cereal. Using a spatula mix it well and then transfer it to a greased 9 inch pan.
