Chicken divan recipe with mayo and cream of chicken soup

Chicken Broccoli Divan is a perfect weeknight meal- it's got both protein and vegetables in one dish and it's oven-ready in 10 minutes or less.  It also uses ingredients you already have on hand and is a great way to use up leftover cooked chicken (or turkey!).  Just layer the chicken and broccoli in a pie plate and smother with the creamy, savory sauce.  The cheese and buttered bread crumbs baked on top make Chicken Broccoli Divan look and taste even more delicious!

Ingredients

  • 4 cups fresh or thawed frozen broccoli florets (about 12 ounces)
  • 2 cups cubed cooked chicken
  • 1 can (10 1/2 ounces) Campbell’s® Condensed Cream of Chicken Soup or 98% Fat Free Cream of Chicken Soup or Cream of Chicken Soup or Condensed Unsalted Cream of Chicken Soup
  • 1/3 cup milk
  • 1/2 cup shredded Cheddar cheese
  • 2 tablespoons plain dry bread crumbs
  • 1 tablespoon butter, melted

Instructions

  • Tips

    • If preparing using Unsalted Cream of Chicken you can add salt to taste.  Our test kitchen found that 1/4 teaspoon of salt enhanced the flavor of the recipe and contributes an additional 147.5 mg of sodium per serving, but you can add less or more to make it right for you.

    • For the easiest cooked chicken, substitute 3 cans (4.5 ounces eachor 1 can (12.5 ounces) Swanson® Premium White Chunk Chicken Breast in Water, drained, for the 2 cups cooked chicken.
    • You can prep this and freeze it for later!  Assemble as directed, wrap tightly (add a layer of parchment on top under the foil so the cheese won’t stick) and freeze.  From frozen, bake, covered, at 425°F. for 45 minutes or until hot.  Or, thaw in the refrigerator and bake, covered, for 35 minutes or until hot.
    • Out of breadcrumbs? Substitute crushed cornflakes for the bread crumbs and omit the butter.

  • Step 1

    Heat the oven to 400°F.  While the oven is heating, place the broccoli and chicken into a 9-inch pie plate.

  • Step 2

    Stir the soup and milk in a small bowl.  Pour the soup mixture over the broccoli and chicken.  Sprinkle with the cheese.  Stir the bread crumbs and butter in a small bowl.  Sprinkle the bread crumb mixture over the cheese.

  • Step 3

    Bake for 20 minutes or until the chicken mixture is hot.

    I have had this recipe for years, but it was tweaked I do is add a cup of Mayo, and the juice of half a lemon and a tsp of Curry Powder (I have increased the curry powder at times) - serve if over rice - everyone loves it

    It was good but I thought it needed some salt and/or garlic or a little extra spice to the sauce. .i don't know how you fit 4 cups of broccoli and 2 cups of chicken and the sauce in a 9 inch pie plate. I ised a 8 X 11 1/2 pan and it was just the right size.i will definitely make this again, but spice it up a bit.

    Do you realize the video & written instructions both have different oven temps? The video says to preheat at 350/ the written directions say 400! Had this meal a lot growing up - was a favorite.

    I found this recipe on the back of a can of cream of chicken soup. Since I had all of the ingredients, I decided to give it a try and so glad that I did! I decided to season my chicken with adobo becacuse the recipe didn't mention seasoning chicken prior to combining ingredients. I was skeptical whether everything would fit inside a 9in pie pan, but of course it did just right! Very tasty dish! I recommend seasoning your chicken though.

    Leftovers: This recipe calls for pre-cooked chicken, so keep those leftovers! I love using leftover rotisserie chicken or even chopped BBQ chicken. If you don’t have leftover chicken handy, you can simply saute up some beforehand.

    White wine: I love cooking with wine — mostly because I can use the bottom-shelf, $5 bottles! Since this recipe has so many other tasty ingredients, the flavor of the wine is mellowed out. Don’t feel like you have to use expensive bottles! And if you’re not keen on using wine, you can always replace it with chicken broth.

    Cheese, please! This recipe calls for cheddar cheese — but don’t feel limited to that! Feel free to swap out the cheddar for parmesan or Gruyere!

    Other add-ins: Two other historical additions to this recipe are mushrooms and water chestnuts. If you’ve never had water chestnuts in a dish, you are missing out — they add a truly unique crunch that will make your casserole pop while bringing many additional nutrients!

    Internal temperature: Since the meat is already cooked, you don’t really need to reach a particular temperature for food safety reasons. Aim for 165 degrees for thorough warming (and to account for any stray bacteria)!

    Can You Freeze This?

    Alas, this is one casserole you probably shouldn’t freeze. Mayonnaise-heavy casseroles like in this recipe technically can be frozen, but as you thaw your casserole to reuse it, the mayonnaise tends to break, which means the eggs, oil, and vinegar in the mayonnaise will separate and leave you with a weird, gloopy sauce.

    The taste will still be fine, but the texture may not be pleasant. Freeze at your own discretion!

    Servings: 8 servings

    • 2 (10-ounce) packages frozen broccoli, chopped, thawed
    • 6 cups cooked chicken, shredded
    • 2 (10 ¾ -ounce) cans cream of mushroom soup
    • 1 cup mayonnaise
    • 1 cup sour cream
    • 1 cup sharp cheddar cheese, shredded
    • 1 tablespoon lemon juice
    • 1 teaspoon curry powder
    • 1/4 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1/2 cup white wine
    • 1/2 cup milk

    Topping:

    • 2 cups soft bread crumbs
    • 1 teaspoon Italian seasoning
    • 1/4 cup unsalted butter, melted

    • Preheat oven to 350 degrees. Spray a 9x13 baking dish with nonstick cooking spray; set aside.

    • Drain thawed broccoli in a colander then spread out on a double layer of paper towels to remove all excess moisture. 

    • In a large mixing bowl, stir together the soup, mayonnaise, sour cream, Cheddar, lemon juice, curry powder, salt, pepper, to taste, wine, and milk until combined. 

    • Add the broccoli and chicken to the sauce and gently toss until evenly coated.

    • Pour mixture into prepared baking dish. Pat the top to even out with a rubber spatula.

    • In a small bowl mix together the topping ingredients. Sprinkle evenly over the casserole.

    • Bake casserole in the preheated oven for 40-45 minutes or until casserole is heated through the center.
